Domaine Chopin et Fils

The Domaine Chopin is comprised of 13 hectares of vineyard near the intersection between the Cotes de Beaune and the Cotes de Nuits. The vines range in age from 15-70 years old with average yields limited to 40 hectoliters per hectare. Agricultural practices are organic, but the estate is not certified.

Winemaker Arnaud Chopin, a rising star in Bourgogne, is the 4th generation in the family making wine on the familial domaine. After several years of experience at wine estates in South Africa, Arnaud returned to the domaine determined to make wines of elegance and finesse and terroir, not focused on power and new oak.

The vineyards are hand harvested and the clusters are 100% destemmed. After a cold pre-fermentation, alcoholic fermentation lasts 15-20 days. The red wines are aged in 30% new Vosges barrels except for the Nuits Saint Georges 1er Cru which see 100% new barrels. The wines see little or no filtering, and fining is done with egg whites.

Every effort is made to preserve the individual character of each terroir and to make wines with pure fruit and supple tannins.
