Not fined or filtered. Description This ancient estate was originally built in the 13th century as a fortified rest stop for pilgrims on the route to San Juan de Compostela. Today it is a quintessential Mediterranean winery, producing delicious wines with the archetypal flavors of Provencal garrigue, black pepper spice and deep, ripe fruit from the poor soil of its stony, hillside vineyards. Agriculture at the estate is all organic, with no use of synthetic pesticides, herbicides or fertilizers. Yields are kept low and much of the harvest is done by hand. In the cellars, the principles of non-interventionist winemaking are followed, and the wines are handled as gently as possible to preserve the freshness of the fruit. 80% of the wines are fermented traditionally with a four week maceration. 20% goes through carbonic maceration to emphasize fresh, soft, ripe fruit character. The wine is aged in a mix of barrels of different ages. Little sulphur is used, and the wines are not fined or filtered. The result is a wine bursting with the aromas of framboise and spice. In the mouth there are layers of bright black raspberry and black cherry fruit with hints of spice and black pepper. The tannins are soft and round with notes of chocolate and vanilla. This is a real crowd pleaser. |
