Description
This ancient estate was originally built in the 13th century as a fortified rest stop for pilgrims on the route to san Juan de Compostela. Today it is a quintessential Mediterranean winery, producing delicious wines with the archetypal flavors of Provençal garrigue, black pepper spice and deep, ripe fruit from the poor soil of its stony, hillside vineyards. Agriculture at the estate is all organic, with no synthetic pesticides, herbicides or fertilizers. Yields are kept low, and much of the harvest is done by hand.

In the cellars, the principles of non-interventionist winemaking are followed, and the wines are handled as gently as possible to preserve the freshness of the fruit. 80% of the wines are fermented traditionally with a four week maceration. 20% goes through carbonic maceration to emphasize fresh, soft, ripe fruit character. The Nuance is then aged in tank. Little sulphur is used, and the wines are not fined or filtered.

Like the Tonneaux version which is aged in barrel, the Nuance is bursting with lush, ripe framboise aromas. In the mouth, it is full of bright black raspberry and black cherry fruit
with tones of wild rosemary, thyme and black pepper. The natural fruit tannins are soft and round and the finish is sweet and elegant.
