Ch. du Couvent is the second wine of the well-regarded Pomerol estate, Clos
René. The property owns 12 hectares west of RN89 in Pomerol and the soil
is mainly sand and gravel. Plantings are 70% Merlot, 20% Cabernet Franc and
10% Malbec. Grapes are handpicked at optimal ripeness before full destemming
and a strict sorting process to remove unripe or rotten fruit. The musts
are fermented in temperature controlled concrete vats before aging in barrels,
25% are new each year. Total production is about 1,000 cases per year, depending
upon the character of the vintage.
