Producer Domaine Caillot Region Burgundy, France Encepagement 100% Chardonnay 25-50 year old vines. Top premier cru vineyard next to Batard Montrachet. Organic agriculture. Elevage Seven-month fermentation with wild yeast. Little to no sulphur. 16 months in barrel. 75% new barrels, 25% one- and two-year old barrels. Bottled by gravity. Fined, but not filtered. Racked once before bottling. Description The Pucelles is absolutely grand cru quality with tremendous intensity and length. It combines a rich, layered character with plenty of toasty oak, appealing minerality, complex fruit and refreshing acidity. The French toast-scented 2000 Puligny-Montrachet Les Pucelles has outstanding breadth and amplitude in its medium-bodied character. Velvety-textured and juicy, this is a broad, poached pear, spiced apple, and mineral-flavored wine. It is intense, fresh, and reveals a long, pure finish. Leesy aromas of ginger, quinine, smoke, nuts and vanilla; this will have benefitted from the racking that was slated for late June.
