Elevage
Seven-month fermentation with wild yeast. Little to no sulphur. 16 months in barrel. 75% new barrels, 25% one- and two-year old barrels. Bottled by gravity. Fined, but not filtered. Racked once before bottling.

Description
The Pucelles is absolutely grand cru quality with tremendous intensity and length. It combines a rich, layered character with plenty of toasty oak, appealing minerality, complex fruit and refreshing acidity.

From the The Wine Advocate, Issue 138 (Dec 2001): "Points: 90-91. The French toast-scented 2000 Puligny-Montrachet Les Pucelles has outstanding breadth and amplitude in its medium-bodied character. Velvety-textured and juicy, this is a broad, poached pear, spiced apple, and mineral-flavored wine. It is intense, fresh, and reveals a long, pure finish. From the International Wine Cellar (Sept/Oct 2002): "Points: 89-92. Leesy aromas of ginger, quinine, smoke, nuts and vanilla; this will have benefitted from the racking that was slated for late June. Tactile, concentrated and rich, with a suggestion of roasted fruits. Perhaps not quite as pure as the Folatieres, but chewier and larger-scaled." © International Wine Cellar
