Vibrant, young winemaker Jean-Francois Bordet’s family has been making wine in Chablis since 1595. The estate includes 14 hectares of vineyard, and in addition buys Vaillons and Vaudesir from neighbors.
The sparkling new cellar is state of the art, and Jean-Francois is experimenting with horizontal tanks. Except for the grand cru, all elevage is done in stainless steel. The wines exhibit the classical style of Chablis with clean fruit, fresh, bright acidity, and a clear sense of minerality from the abundance of fossil shells in the Kimmeridgian limestone.
